Ah Beef (ground turkey) Enchilada Casserole…. It’s simple, it’s flavorful, it’s cheesy, it’s scrumptious, and my mother-in-law says it’s one of the best meals I make, so it gets made a lot!
Ingredients
- 1 pound ground turkey (or beef if you prefer)
- 1 packet taco seasoning
- 1/4 teaspoon seasoned salt (I use Lowery’s)
- 1 10-oz can of red enchilada sauce
- 3/4 cup water
- 1/2 cup salsa (smooth in a mini chopper)
- 6 (6-inch) Keto tortillas (I use Mission’s Carb Smart)
- 2 cups shredded Mexican Mix Cheese
- Sour cream for serving – Of Course!
Instructions
- Turn that oven to 350! Do it now or you’ll forget! Also, take off your jewelry, this one gets messy…
- Grease the bottom and sides of a 9-inch deep dish pie dish with butter or spray.
- In a large skillet over medium-high heat, brown the ground meat
- Once the meat is browned, stir in taco seasoning and salt.
- Stir in the enchilada sauce, water, and salsa. Then bring to a boil.
- Cook, stirring occasionally covered, for 4-5 minutes, stir, then 3-4 more minutes uncovered, until slightly reduced. Then turn off the stove.
- Cut the tortillas into 1-inch strips, then arrange half of them in the bottom of your greased dish (it’s a little like tetris).
- Add half of the meat mixture, then sprinkle half of the cheese over the top.
- Repeat the layers, using the remaining tortillas, meat, and then cheese.
- Bake until the cheese is melted and bubbly, about 10 minutes.
- Serve with sour cream if you’re like me and love sour cream!
