Low Carb (Keto) Creamy Spaghetti

I think I’ve ruined my family with this one (haha). You’ll never go back to regular old spaghetti again! The combination of flavors is amazing! I’ve increased the normal 1-1 ratio of noodles to meat you’ll usually find with typical spaghetti recipes because I messed up one night and we loved it that way! Happy accidents are the best sometimes!

Ingredients:

  • One bag of Keto Spaghetti  Noodles (I use Great Low Carb Bread Company) or 1lb Keto Prepped pasta How to prepare “Keto” Pasta (with Real Pasta!)
  • 1 tbsp olive oil
  • 2 lbs ground turkey (or beef if you prefer)
  • 1 tbsp onion powder
  • Seasoned salt to taste (I use Lawry’s)
  • Pepper to taste
  • 28-oz tomato sauce (I use the box of hunts and pour the whole thing in)
  • 1 tsp dried basil
  • 1/2 tsp dried oregano
  • 1/2 tsp  dried parsley
  • 1/2 cup whipped cream cheese
  • 1/2 cup sour cream
  • 1/2 cup shredded cheddar cheese (or more)
  • 1/2 cup shredded Monterey Jack cheese (or more)

Directions:

  • Turn that oven to 350! Do it now or you’ll forget!
  • Grease a large baking dish with butter or spray (I use a 9×13 baking dish)
  • Boil noodles until done. Keto (Great Low Carb Bread Company) noodles take about 2-3 minutes longer than regular noodles to cook. Once they are cooked to your taste, drain the noodles. (Remember that you will be baking this later, so al dente is your friend! My husband loves him some al dente pasta!)
  • ***If you are using Keto Prepped noodles, simply bring them to warm slowly in water over low -medium heat on the stove
  • Pour noodles into the baking dish.
  • In a large skillet over medium-high heat. Add olive oil and brown ground meat, about 3-5 minutes.
  • Season with salt and pepper, to taste.
  • Stir in tomato sauce, basil, oregano, and parsley.
  • Whisk in cream cheese and sour cream until melted.
  • Once the sour cream and cream cheese is mixed, pour the sauce into the baking dish and sprinkle with cheeses. I usually make sure that between the two cheeses, the whole dish is covered. I love cheese!
  • Bake for about 15-20 minutes until bubbly and heated through.
  • Serve!
