Who doesn’t have a fond memory of warming up in the winter with a wonderful bowl of Beef Stew?! Well if you don’t, get ready to make some memories! This is a combination of two recipes that my husband and I had that we have merged into one. Sounds a lot like marriage, huh? It’s amazingly full of flavor that warms your heart and fills your belly! …and I personally think it’s even better the next day!
Ingredients
- 2 lbs beef chuck stew meat, cubed into 1″ pieces
- 2-3 tbsp extra-virgin olive oil divided into 1 & 2 tbsp
- 1 tbsp onion powder
- 2-3 stalks of celery, chopped into bite-size pieces
- 1/4 – 1/2 tsp Seasoned salt
- 1/8 tsp ground black pepper
- 3 cloves garlic, minced (I use the pre-minced squeeze kind!)
- 1/4 cup tomato paste
- 6 cups low-sodium beef broth
- 1 cup red wine (a little wine for the stew, a little wine for me!)
- 4 tbsp All-Purpose Keto flour (I use King Arthur Keto Flour)
- 2 tbsp Worcestershire sauce
- 1 tsp dried or fresh thyme leaves
- 1 lb baby potatoes, Keto prepared and cut into fourths (bite-size pieces) How to prepare “Keto” Potatoes (with Real Potatoes!)
- 12 oz bag frozen peas & carrots
- Optional: 2 tbsp hot sauce (such as Cholula)
Directions
- In a large dutch oven or heavy-bottomed pot over medium heat, heat 1-1 1/2 tbsp olive oil. Add beef and cook until seared on all sides, about 7-10 minutes, working in batches if necessary. Transfer beef to a plate or bowl.
- In the same pot, cook celery until soft, 3-5 minutes. Season with salt and pepper. Add Garlic and cook until your kitchen smells delicious, about 2 minutes. Add tomato paste and cook until tomato paste has darkened, about 1-2 minutes.
- Add beef back to the pot and then add broth, wine, Worcestershire sauce, and thyme.
- Bring to a boil then reduce heat to a simmer.
- This is when you need to taste it and possibly season it with some more salt and pepper!
- Then cover and let simmer until beef is tender, 30 to 45 minutes. Stirring occasionally.
- Stir in flour and potatoes and simmer, covered, until potatoes are warmed, 5-7 minutes.
- Stir in peas and cook until warmed through, about 2-3 minutes.
- Taste it again and make sure you don’t want any more salt, pepper, or Worcestershire.
- Stir in hot sauce if you like that burn!
- Serve!
