Soooo… my kids are broken. The first time they tried this, they said, “mom, ummm… I don’t want to hurt your feelings, but can we have this with some more cheese and without beans?” WELL precious pieces of my heart, YES to more cheese, but you can pry the beans outta my cold dead hands. Solution…. I wait til I’m done with everything else, serve them up each a bowl, then I add the beans, get the broiler ready and everyone is happy! I also did this one for the first time with fake beef for these pictures and let me tell you…. I can devour it either way!
Ingredients:
- 1 lb ground turkey, beef, or plant-based ground beef (used in the pictures)
- One bag of Keto Elbow Noodles (I use Great Low Carb Bread Company)
- 1 taco seasoning
- Can of corn (you can skip these if you are really going to hard-core keto)
- Can of black beans
- Packet of cheese (stolen from a cheap “deluxe” Mac n cheese box
- ***1 mini-block (4oz) of Velveeta Cheese if you like it REAL cheesy!
Directions:
- Put water on to boil for pasta. Keto noodles take about 2-3 minutes longer than regular noodles to cook. Once they are cooked to your taste, drain the noodles. (my husband loves him some al dente pasta!)
- On medium-high heat, brown the ground meat (or use 1/8 cup of water to heat plant-based ground beef)
- Add taco seasoning, add corn/beans (if you want), mix in cheese, mix in noodles.
- Grease a 9×12 baking dish with butter or spray and pour that gorgeous mixture in.
- Sprinkle grated Mexican cheese mix over the top
- Broil on high for 3-5 minutes
