Low-Carb (Keto) Cheesy Chicken Broccoli Rice Casserole

So there are just some recipes that will always be comforting to eat. Certain flavors that just make you happy every time. This is absolutely one of those staple foods we all grew up on and now that we know how to make “keto” rice, it’s back in our regular rotation!

Ingredients:

  • ¼ cup butter
  • 2 cloves chopped garlic (or 1 tbsp of pre-minced kind) 
  • 3 cups chicken breasts chopped into 1-inch, bite-size pieces
  • 1 tsp Italian Seasoning
  • 1 tbsp Seasoned Salt, or to taste
  • ½ tbsp Pepper, or  to taste
  • 2 ½  cups chicken broth
  • 1 tbsp olive oil
  • 2 cups long grain rice, Keto Prepared How to Prepare “Keto” Rice (w/ Real Rice!)
  • 2 cups fresh broccoli florets, uncooked
  • 1 can Cream of Chicken Soup
  • 2 tbsp cream cheese
  • ¼ cup mayonnaise
  • 1/4 cup sour cream
  • 2 cups shredded cheddar cheese, separated
  • Optional: 1 tsp dried thyme

Directions:

  • Turn that oven to 375! Do it now or you’ll forget!
  • Grease a large baking dish with butter or spray (I use a 9×13 baking dish)
  • In a large skillet over medium-high heat, melt the butter and saute the garlic until your kitchen smells delicious (about 1-2 minutes)
  • If desired, season chicken with salt and pepper, then “Fry” and sear chicken on medium-high heat until you start to get that golden brown color on the sides. About 5-6 minutes. 
  • Get out a medium to large pot and bring chicken broth, olive oil, and Keto Prepped How to Prepare “Keto” Rice (w/ Real Rice!) rice to a boil, then reduce heat to a simmer.
  • Cover and cook for 6 minutes.
  • Add the broccoli and replace the cover. Cook for 9 more minutes.
  • Turn off the heat and leave the cover on. Let the rice stand for 10 minutes.
  • Add the cooked chicken, soup, milk, mayo, cream cheese, sour cream, any seasonings, and half of the cheddar cheese.
  • Pour mixture into the casserole dish and top with remaining cheese.
  • Cover and bake for 15-20 minutes.
  • ***If you use frozen broccoli instead of fresh, wait and add after rice has cooked for 12-13 minutes instead.
