Low Carb (Keto) Beef Crispitos

I don’t know about other people in their 40s, but when I was in school, “Crispito Day” was the day to get in the lunch line early! These are SO good, they instantly take you back to the days of rectangle pizza and tang!

Ingredients

  • 16 oz ground beef OR ground turkey (I use Ground Turkey)
  • 3 tbsp paprika
  • 1 tbsp tumeric 
  • 2 tbsp cumin
  • 3 tbsp water
  • 3 tbsp chunky salsa (blended or chopped in a mini chopper)
  • 8 tortillas (7-8 inch “soft taco” size Carb Smart or Zero carb)
  • vegetable oil cooking spray
  • Queso sauce, for topping (if you truly want to bring back those childhood memories, this was “government cheese” when we had it in school!)
  • Sour cream, for serving (cause we’ve all gotten older and love to have flavors with layers!)

Instructions

  • Turn that oven to 400! Do it now or you’ll forget! 
  • In a large skillet, brown the ground meat on the stovetop.
  • Transfer to a food processor and pulverize!
  • In the food processor add the paprika, turmeric, cumin, water and salsa. (This burrito-type delicacy has a paste-like consistency, so No Chunks or Lumps allowed!)
  • To Prepare, you’ll need to cut the tortillas in half. Fill each one with about 1/4 a cup of the mix. Fold over each end and tightly wrap the tortilla around the filling. 
  • Grease a baking sheet with butter or spray, then place the filled tortillas, seam-side down on the sheet. 
  • Bake for 12 -15 minutes, until they are just starting to get crispy.
  • Flip over and bake for another 4-5 minutes.
  • Serve topped with a generous helping of queso, nacho cheese,  and/or sour cream.
  • Sigh and remember a time when showing off your outfit meant sharpening your pencil in front of the class!
