I love a good 30-minute meal, if you know what I mean (wink, wink, say-no-more, say-no-more), so I had to adapt this one over to Keto! …and if you know me, you know I had to throw my own touches in here and there!
Ingredients:
- One bag of Keto Spiral or Elbow Noodles (I use Great Low Carb Bread Company)
- 1 lb. Italian sausage
- 2 tbsp extra-virgin olive oil
- 1 tbsp butter
- 3 or 4 cloves minced garlic (I use the already minced squeeze kind)
- Seasoned salt to taste (I use Lawry’s)
- Pepper to taste
- 2 tbsp all-purpose keto flour (I use King Arthur Keto flour)
- 1 cup chicken stock or broth (whichever you have on hand)
- 1 cup heavy whipping cream (but in a pinch, half n half will do as well)
- 1 bag (2 cups) shredded Italian Mix cheese
- 1/2 cup Parmesan
- *Optional – 1 squirt of hot sauce (about 1 tsp or more if you like it hot!)
Directions:
- Grease a large baking dish with butter or spray.
- Boil noodles until done. Keto noodles take about 2-3 minutes longer than regular noodles to cook. Once they are cooked to your taste, drain the noodles. (Remember that you will be baking this later, so al dente is your friend! My husband loves him some al dente pasta!)
- While the noodles are cooking, in a large skillet on high heat, brown and crumble the sausage. Once the sausage is browned, put it in the greased baking dish and set aside.
- Turn down the heat to Medium and add extra-virgin olive oil, butter, and garlic. Saute garlic until your kitchen smells delicious (about 2-3 minutes)
- Season with salt and pepper. (I’m a little heavy-handed here)
- It’s time to make a roux! Add flour and stir, cooking for 2 minutes. (This keeps the roux from being gritty)
- Whisk in stock or broth, then stir in cream. Make certain to keep whisking until all the roux lumps have melted in.
- Bring it to a bubble, then stir in the Italian cheese blend until the cheese has melted.
- Turn off the stove and adjust seasonings if needed, adding hot sauce if you want a kick!
- Drain noodles and pour them into the baking dish
- Pour cheese sauce into the baking as well and mix everything together.
- Sprinkle parmesan cheese and maybe some more Italian mix cheese on top.
- Broil on high for 3-5 minutes. Just until the top gets to that beautiful golden brown!
- Serve!
