Low Carb (Keto) Overnight Sausage Egg & Cheese Breakfast Casserole

This is a staple at our house for what seems like every occasion. We have it on Christmas morning every year. We’ve made it countless times for morning business meetings. The wonderful part is that my kids will eat this one and they just use regular syrup, so everyone is happy!

Ingredients

  • 1 pound breakfast sausage (we always use Jimmy Dean maple)
  • 1 loaf Keto bread (I use Sola, Orowheat, Nature’s Own, or Sara Lee)
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 8 eggs
  • 1 cup milk
  • 1/4 tsp Salt (or to taste)
  • 1/8 tsp Pepper (or to taste)
  • Sugar-free syrup (I use Choc Zero or Lakanto)

Instructions

  • Slice the bread into 1-inch thick slices and cut off crusts.
  • Grease a high-sided 9×13 baking dish and arrange bread so that it completely covers the bottom of the dish (this part is a bit like playing Tetris)
  • In a medium skillet over high heat, brown the sausage.
  • Drain sausage and spread evenly over bread. 
  • In a separate bowl, mix the eggs, milk, and 1/2 of the cheeses.
  • Pour evenly over all ingredients in the dish.
  • Salt and pepper the entire dish to taste. Sometimes we salt & pepper the eggs… sometimes when the whole dish is together. You choose!
  • Sprinkle with the rest of the cheese.
  • Cover in foil and put in the refrigerator overnight. Get some sleep!
  • When you wake in the morning (or 35 minutes before you want to eat),  get that beauty out of the refrigerator and bake it @ 350 for about 35 minutes.
  • Serve with Sugar-free syrup
