Do you ever just want some juicy flavorful fried chicken without actually having to fry chicken? Don’t we all? These little grown up tenderloins have so much flavor and are so quick and easy, you’ll be sure to reach for this recipe over and over! There’s even a little personalization to it! I love cooking for that!
So this one definitely proves that I am all about taking the mystery and BS out of cooking! When it comes to breading on chicken, some people can’t get enough, or if you’re like my kids, you pick it off. They’re obviously broken, but too young to notice! I’ve listed two ways to make this chicken. Both are great! Pick your favorite or do your own thing, either way, I’m sure it’ll be delicious!
Ingredients
- 1/2 cup mayonnaise
- 2 Tbsp Yellow mustard (to taste)
- 1/4 cup grated parmesan cheese
- Salt and Pepper to taste
- 4 tbsp (or 2 cups *I’ll explain later) pork breadcrumbs (I use Pork Panko)
- 10 chicken tenderloins with the tendons removed
Directions
-Turn that oven to 375! Do it now or you’ll forget! Also, take off your jewelry, this one gets messy…
-Grease a baking sheet with butter or spray
-Mix together Mayo, Mustard, Parmesan, Salt, & Pepper in a medium to large bowl. You need room to toss that stuff around!
-Toss, dip, spin, but cover tenderloins in sauce. Do this one at a time, 2, 3, whatever your heart and bowl desires!
-This is where the real side of cooking becomes a thing… So if you like a light batter, you’ll use the 4 tbsp of panko and sprinkle the chicken. My husband wants them COVERED, so we use 2 cups of pork panko in a bowl and we dredge each tenderloin until he is happy!
-After you are happy with your level of batter, place the tenderloins on the baking sheet.
-Get ‘em all on there all covered and wonderful, then bake for 30-35 minutes.
