So the truth about my mashed potatoes… I usually joke that I throw everything but the kitchen sink and I’m pretty heavy-handed with my add-ins. I’ve put some measurements on here as a best guess-stimate of what I use. On this one, as with a lot of cooking, I’m a taste-as-you-go girl!
Ingredients:
- 1 tbsp extra-virgin olive oil
- 1 3/4 pounds ground turkey or beef if your prefer
- 1 tbsp onion powder
- 2 tbsp butter
- 2 tbsp all-purpose keto flour (I use King Arthur Keto flour)
- 1 cup beef stock or broth
- 3 tsp Worcestershire or measure that stuff with your heart!
- 1/2 cup frozen peas & 1/2 cup diced carrots or 1 can of peas & carrots
- 1 tsp sweet paprika
- 2 lbs potatoes for mashing chopped into bite-size pieces and prepared the Keto way (How to prepare “Keto” Potatoes (with Real Potatoes!)
- 3 tbsp sour cream
- 4 tbsp softened cream cheese
- 1/8 cup mayonnaise
- 1/2 cup heavy whipping cream
- 1 stick or 1/2 cup of butter, melted
- 1/4 tsp Seasoned salt or to taste (I use Lawry’s)
- 1/8 Ground Black Pepper or to taste
Directions:
- Grease a large baking dish with butter or spray.
- In an oven-safe bowl, put frozen Keto-prepared potatoes in at 425 to slowly defrost and warm. This will take about 20 minutes.
- While the potatoes are in the oven, brown meat with olive oil in a large skillet over medium-high heat.
- Season meat with salt and pepper.
- Add chopped whole carrot to the meat. Cook with meat for about 5 minutes, stirring frequently.
- Get ready to make a roux! In a second small skillet over medium heat, melt 2 tbsp of butter then whisk in flour for about 2 minutes until you have made a paste.
- Whisk in broth and Worcestershire sauce, then keep stirring to let the gravy thicken for about 2-3 minutes.
- Add gravy to meat.
- Finally, stir in frozen peas or canned peas and carrots.
- Pour this mixture into the baking dish.
- When potatoes are warmed up, turn off the oven and get ready to mash! Sometimes I use the food processor to make this easier
- Pour in the melted stick of butter and heavy whipping cream, then use a masher or your food processor to get to mashing!
- Mix in sour cream, cream cheese, mayo, seasoned salt, and pepper.
- Spoon potatoes on top of the meat mixture and smooth with the back side of a spoon.
- Sprinkle lightly with sweet paprika and broil in the oven for 2-3 minutes. Really watch this or the top will burn, fast!
- Let it cool for a few minutes before serving.
- *** If you like less juice in your shepherd’s pie, drain any excess meat fat after browning the meat.
